'And while I like reading about it, I don’t share the theory fandom seems to have that Sherlock is dismantling Moriarty’s empire during the hiatus. That seems like such an insanely ambitious project for one person, even with Mycroft’s help.'

I agree with this too. It seems unlikely that even Sherlock would be able to do this alone. And it's quite possible that, without Moriarty at the helm, the network will collapse by itself. This is a network full of people who kill, threaten and con people for money. 'Honor' is hardly going to be a factor here. It would probably only be a matter of time before they turn on one another, or simply drift apart. Moriarty was the director and apparent financier; without him it will probably crumble.

Sherlock, if anyone, would probably just have to deal with the assassins who were ordered to kill John, Mrs Hudson, Lestrade. But considering that Moriarty is dead, they are probably not even bothered any more. The person who would have presumably paid them if they *did* carry out their orders, and 'got rid' of them is they didn't, is dead, so why bother any more? That's presuming there is no Sebastian Moran in this series, of course.
